I am in same boat as you...but I just follow the recipes on this site and don't think I've had a meal more than once? I love all the recipes and it makes it alot easier just to cook from this site! I have been able to bring down my AC1 to 7 from 10 and I went down a stage in my Kidney failure! It's the hardest think but it's a adventure that I am glad I went on,tried and did it! Lisa

Life of just cold salads is not the plan!! I fluctuate between stage 3-4, (just one kidney) and I now eat no meat protein, but substitute Hemp seed in small amounts as it does have phosphorous as high as meat. I do a lot of steamed veggies and soup in winter. I keep raw broccoli, broccoli slaw, cabbage, cauliflower, carrots and coleslaw mix on hand. I can steam it and add a bit of shredded cheese, butter and sour cream, or add to low salt chicken soup base, and I use MISO soup base too for great flavor.
I also make pizza dough with just cauliflower and some almond flour, no wheat. There are a MILLION great easy recipes in a Low Carb diet(free online- just search) that can be adapted to CKD too. Using sugar free almond milk, spinach/romaine/kale and adding a few berries makes a thick shake, adding a quality protein powder provides nutrition (cheap whey ones are loaded with additives, choose hemp seed/brown rice, or a better brand of protein with no sugars/ dyes added) Also AVOID corn/soy/safflower oils, choose olive oil or coconut oil, and real butter, not margarine for cooking, the others cause inflammation.
I did not agree with the Renal RD to load up on carbs ( RDA is min 50 per meal- the USDA FORCES this high carb advice on everyone despite the fact we are all fatter than ever, and sicker too.)
As carbs turn to sugar in the blood as quick as sugar itself, one small potato is like 6 cubes of sugar..same ith breads/pastas and most low fat yogurts are loaded with sugar. more new research is proving diabetics are harmed by HIGH carb/grain diet.. requiring more insulin all the time! so limiting all carbs, NO processed foods/box mixes, or fast food is best for keeping good blood sugar. Diabetes, high BP and CKD all are related, and diet is one way to control it yourself.
