  • Tapioca Pearls and Tapioca Flour

    There is little mention of tapioca pearls and no mention of tapioca flour on the DaVita site. I am surprised that there hasn't been more discussion on this food, as according to the data I can find, tapioca is very low in both phosphorus and potassium.

    There is only one recipe in the DaVita recipes section using tapioca pearls - Baked Pineapple - which, incidentally, is very good. I'm really surprised that there aren't more recipes using this ingredient.

    There are no recipes or discussions at all for tapioca flour. People who need to follow a gluten-free diet use it to mix with other flours for baking, but I don't see many references at all on the web that kidney patients use it much.

    Does anyone have much experience using these ingredients successfully in their kidney diets?
