I have not found any references to the vegetable celeriac, sometimes known as celery root, on this site. I occasionally like to eat this vegetable and would like to know whether it is fine to continue eating in controlled portions. It can be eaten raw, but I think cooked/boiled would be best to lower the potassium. I do not have to watch my potassium as closely as some... I do have to watch my phosphorus, however. I am not on dialysis.

Does anyone on here have any experiences with this vegetable? I see that there are potassium and phosphorus values for it on other websites, but was interested in whether a dietician or other kidney patient would respond to this post.
