I had my right kidney removed in Oct 2008. I was told at the time no special diet was required. My cholesterol has been on the high side, and was referred to a Dr, who referred me to a dietician. I was told to watch my protein, phosphorus and potassium and sodium intake.
As an aside my eGFR and Creatinine have been steady for the last 2 years, varying by the accepted range I have been told. The one kidney has grown a little to compensate.

Can anyone tell me whether a Mediterranean Diet would be acceptable in itself, or would it need to be amended to be Renal Friendly?
